This is a wonderful time of the year to get your bake on, from pies to all kinds of cookies. Everyone has their own traditions when it comes to what they eat during the holidays. Our Manager Cassondra’s tradition is making pizzelles, and of course eating them as well.
While living in New York, Cassondra friended an Italian family that showed her what Italian pastries were all about. Her favorite quickly became the pizzelle cookie. The pizzelle is a light and thin like a cracker, but tastes like a cookie. It is great to eat by itself, or you can make a delicious cannoli cream dip to go with it.
It’s a very easy cookie to make. Start out by getting a pizzelle iron. You can buy one right off Amazon. Then grab two bowls, and a flat cookie tray.
3 eggs (room temp.)
1 ¾ cups floor
½ teaspoon anise extract or
1 teaspoon vanilla extract
½ cup butter (room temp)
2 teaspoons baking powder
¾ cups sugar
Beat the eggs and sugar. Then, add cooled melted butter, and vanilla or anise. Sift flour and baking powder and add to the egg mixture. Batter will be stiff enough to be dropped by a spoon. Batter can be refrigerated to be used at a later time. Makes about 25 to 30 pizzelles.
There are many other extracts you can add to this cookie including: pumpkin, nutmeg, cinnamon, chocolate or whatever you could think of really. Cassondra also likes to add food coloring to make the cookies more festive. Reds and greens work well.
If you’re looking to make the cannoli dip to go with your delicious cookies here is the recipe for that:
½ Cup whipping cream
1 15- ounce container whole milk ricotta cheese (strained)
½ cup powdered sugar
½ teaspoon vanilla
¼ teaspoon ground cinnamon
1/3 cup mini dark chocolate chips
Whip the crema until stiff peaks form, then set aside. In a new bowl add the ricotta cheese, powdered sugar, vanilla and cinnamon, fold in the whipped cream and chocolate chips. Chill the cream for about 2 hours. Then serve with broken up pizzelles for dipping.
